I have had great results with a similar recipe when making osso bucco.
i often use my Fagor pressure cooker for about 40 minutes instead of the 3 1/2 hours in the oven. let's me make it on a weekday after work.

i'd want to try it with the short ribs, but might need to adjust the cooking time +/- 15 minutes
