Definate New England comfort food...
Great for breakfast also!

[color:"blue"]Creamed Egg & Cod on Toast[/color]

1 pound cod filets, cut into 1x1x1 inch chunks
4-5 hard boiled eggs, chopped into large chunks
1 onion, sliced and sauted to opaque
1 cup frozen peas, nuked for 1 min. 30 sec.
2 cups bechmel sauce

make bechmel sauce and keep hot.
add cod, egg, onions & peas.
turn off heat or leave on the lowest simmer, and let sit for 10-15 minutes, stiring every few minutes.
this will cook the cod perfectly.
Serve over toast of your choice or english muffins.

Interesting recipe- not being from your part of town- can I use frozen? or does this work with another fish?

mary, frozen is fine, as a matter of fact, preferable...
most cod in the fish mongers case has been previously frozen already and thawed...
I only buy it frozen and vacuum sealed now...

annie, it's good with scallops also... or flounder... or almost any light flaky fish...

This is always a hit for breakfast when the whole family gets together, like at Thanksgiving...
Can be made a day before and just re-heated in the nuke...

Brian--I am not a big fish fan anyway, and I normally love your recipes, but got to say, this one looks gross to me! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Sick.gif" alt="" /> It reminds me when I was growing up, always hated canned tuna. I was visiting with a friend and her mother made creamed tuna on toast for breakfast and I took one bite and almost gave it back! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Yikes.gif" alt="" />

Considering you are not a fish fan, I wouldn't think this would appeal to you...
It's good just with the hard boiled eggs alone... just add more eggs...
Creamed Egg on Toast! great with crumbled bacon added... or sausage or chipped beef or pastrami or corned beef...

OMG!!! Bagel, Cream Cheese & Nova Scotia Lox is the best for breakfast!
throw in a thin slice of red onion and fresh ground black pepper... Heaven!
even better on a split Bailey(sp?)!
BUT... if you don't like fish... you'll never know Heaven!
I can't imagine a life without fish! We love it soooooo much!
