For those of you who, like me, picked up a few unwanted pounds over the holidays (and vacation), this blog has great recipes and ideas for the South Beach Diet. This way of eating really works; I lost twenty pounds on it over five years ago, and have kept it off with the exception of the holiday pounds, which always come off easily when I go back to eating properly. Kalyn's KitchenShe's also on Facebook, for those of you who are there.

I've lost over 100 pounds since last March... I'm not following any diet, per se, but more following a rule... "only ONE pork chop"... eat less = lose weight... eat SLOWLY and always wait 20 minutes before even thinking about taking any seconds or dessert... chances are you'll be full by then... It takes 20 minutes for your stomach to tell your brain you are full... I still lost weight over the Holidays using that rule... and still got to eat pie for dessert! also, only eat when you are hungry... if it's dinner time and you're not hungry... don't force yourself to eat just because it's dinner time...

I lost 35 pounds 6 years ago on South Beach. Have recently gained back some of it, not all of it, by far, but planning on trying to get back on the wagon--once I clear all the junk food out from the holidays! Breakfast was always the hardest meal for me. That looks like some good suggestions there though. Thanks!

Georgia, went on Kalyn's site and boy does the recipe for Mexican Red Lentil Soup with Lime and Cilantro sound good. I even have all the ingredients so I know what I will be doing today! Thanks for posting the link.

Annie, I thought that one looked good too; unfortunately I don't have any lime or cilantro in the house, and the cilantro I had growing in my herb garden is quite frozen by now! You'll have to let me know how it turns out!!

Georgia, I have a couple of limes and some cilantro in a jar of water covered with a baggie in the fridge. Right now I have a loaf of bread in the oven. So after lunch I'll have to make sure the cilantro is still good. I'll let you know.

Georgia, there are a couple of omissions in the recipe. #1 what size can of tomatoes? #2 never said when to put the lentils in. I had a small can (14oz) of tomatoes and used that. Put the lentils in when the broth and tomatoes were put in. It is simmering now. I believe it is going to need either more tomatoes or more stock as there is hardly any liquid in it all. I used a tsp. of Frank's Red Hot Sauce. I just tasted it, lentils and celery not quite cooked but it seems kind of bland. I'll see what happens after the lime juice and cilantro.

Yes, whenever she refers to a can she means the 14-ounce size, otherwise she'll say the size. Not sure about when to put the lentils in...I didn't see that omission, but I think you made the right decision. Does it need more salt? Lentils are famous for needing salt, IMO.

Georgia, thanks for that info about the size of can. I should have read the narrative preceeding the recipe as she said when to put the lentils in then. Supposed to put them in along with the water there were in (which I did not so that would be why it is thick) after cooking the other stuff up for 25 mins of so. I added about a cup of chicken broth that I had in the fridge. Also a lot of salt and fresh ground pepper and I doubled the spices and hot sauce. And then the lime juice and cilantro were added what a difference that all made. I just finished a cup of it and I'm pleased with it after the changes I made. It was too bland for me at first.

So one piece of fudge a day is enough for me... a little bit satisfies me... My problem has always been two or three porkchops, too much bacon, etc.! and too many mashed potatos! and eating veggies in cheese sauce! You see the pattern here? I just don't do that anymore... and to tell you the truth, after 10 or so months of doing this... The very thought of a bacon cheeseburger now makes me feel ill...

I just watched Ina Garten add a splash of red wine vinegar to her lentil soup. That sounds like a good idea too!

Everyone needs a jump-start with some sort of plan and after that the bottom line is portion control! South Beach is excellent. I use some of it being diabetic. It's an excellent diabetic eating plan. Nice colorful foods with the most nutrients.

I made the Balsamic and Onion Pot Roast from the Kalyn web site posted by GaKaye. I made it exactly as directed. I thought it was very good and had a wonderful tangy flavor. I really slathered on the rub, as we like spicy overtones. It came out with way too many onions (IMHO)for the amount of roast. I used 3/4 of a large onion. The process is a little time consuming for a crockpot recipe. That being said,the results were worth the effort. If I was busy, and wanted a very quick crockpot meal, I probably would not take the time. It was, however, wonderful. GaKaye - Thanks for the web site.
