2 dozen large shrimp (you can add more if you'd like)
flour (for dusting shrimp)
2 ounces olive oil
1 tablespoon chopped garlic
2 tablespoons shallots
4 ounces limoncello
8 ounces chicken stock
1/2 cup butter
salt and pepper


Peel and de-vein shrimp. Dredge shrimp lightly in flour.

Place shrimp in medium to hot skillet with olive oil; sauté lightly, about 2 minutes on each side.

Remove shrimp from pan, also empty oil, but do not wipe out pan.

Add garlic and shallots to pan; sauté on medium heat until light golden.

Pour in Limoncello and chicken stock and stir. Raise heat and bring ingredients to a boil.

Add butter (latter cut into pieces). Let sauce reduce and thicken until it is the consistency of heavy cream, give a taste to see if it's lemony enough for you. I add 1/2 fresh lemon juice for my tastes. Add shrimp. Cook a few minutes then remove before the shrimp get overdone.

Add salt and pepper to taste. Serve immediately over fettuccine.

BTW.....I also use this sauce for my Chicken Piccata. I add the juice of 1/2 lemon to the mixure. Serve w/lemon slices.

It is Heaven! BTW, forgot to mention that I got the biggest and best frozen shrimp @ Grand Marche in Cole Bay. Next to last aisle near the wine section. Very reasonable, too. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />

Annie, H*ll no! It's a real chore to make so I buy it, gladly! Contessa...I read a couple of the recipes too and boy somewhat has to be either very dedicated or have a couple of human lemon peelers close by! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> I'll have to look for it next time I go to a package store, but thinking about it...I never go to a package store! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Laugh.gif" alt="" /> Guess I'll make a special trip one of these days as the recipe really sounds delicious.

Annie, worth the trip. Hint: I keep Limoncello in the freezer. For a quick yummy drink, put some Limoncello in a glass, add some ice then add some seltzer.

I still haven't made this because I need to buy the limoncello. But my question is, with 4 oz. of limoncello, how sweet is this dish? Seems to me it would be tooo sweet?

Mary, glad you liked it. It's a favorite of mine. BTW, if you think it's too sweet add a hit of cream....that smooths out the flavor. I do this w/Marsala & Piccata, too. I don't like sweet foods.
