My son has a "New" favorite dessert. His and my daughter-in-law's birthday is the 29th of April. I always have a family dinner party, and I would like to make his favorite dessert for him which is key lime pie. I have looked at all of the recipes on the internet, however; I would like a tried and true recipe. And - I know someone here has a GREAT recipe. Thanks for any help.

I hate to admit this, but the best key lime pies I ever made came from the recipe on the back of a Key Lime juice bottle! I had gone to the store for key limes & when I picked up the bags, the thought of squeezing & zesting all those teeny little fruits was just too overwhelming with the rest of the party to cook for.

Honestly, they disappeared practically instantly, and were absolutely dee-lish. Don't know the brand name of the juice off the top of my head but will look for it on my next trip to the store.

Check out Frozen Key Lime Pie by Ina Garten on the Food Network.I have made it many times with great success.

Here is a recipe that I have made many times, although it is not actually a Key Lime (Cool Lime Pie) everyone really loves it. You see a picture of it here: http://www.tasteofhome.com/Recipes/Cool-Lime-Pie

Ingredients

1 package (8 ounces) cream cheese, softened
1 can (14 ounces) sweetened condensed milk
6 ounces limeade concentrate
4 drops green food coloring, optional
1 carton (8 ounces) frozen whipped topping, thawed, divided
1 graham cracker crust (9 inches)
1 kiwifruit, peeled and sliced
Mandarin oranges and chopped pistachios, optional

Directions

In a large bowl, beat cream cheese and milk until smooth. Beat in limeade and food coloring if desired. Fold in half of the whipped topping. Pour into crust. Cover and refrigerate for 2 hours. Garnish with kiwi, remaining whipped topping, oranges and pistachios if desired. Yield: 6-8 servings.

I've been using this one for years:
9" baked graham cracker crust
For filling-
1/2 envelope gelatin
2 Tbl cold water
2 eggs, separated
1/2 C sugar
pinch or salt
juice of 1 lime and grated peel of 1/2 lime
1/2 C heavy cream, whipped until it holds a soft shape
-Make pie shell and cool. In a small saucepan, sprinkle gelatin over cold water and let stand 5 minutes or until spongy. Meanwhile, beat egg yolks with half the sugar, the salt, lime juice, and peel, until light and creamy. Pour into the top of a double boiler and cook, stirring, over gentle heat until mixture is the consistency of heavy cream. Take from heat. Dissolve gelatin over a pan of hot water and stir into lime mixture. Cool, stirring occasionally. Beat egg whites until they hold a stiff peak and beat in remaining sugar, a spoonful at a time until smooth and glossy. When lime mixture starts to set, beat until smooth and fold into meringue, with whipped cream. Pour into pie shell and chill.

Well y'all - it was a grand success. I used a combination of several recipes and this is what I came up with.

1 pie crust baked 1/2 of the way (I did not use graham cracker crust, as my family loves pastry)
3 egg yolks
1 can eagle brand milk
1/2 cup Nelly and Joe's key lime juice
put in oven on 350 for 17 minutes.

I picked fresh strawberries earlier that morning. I served the pie with sliced strawberries and whipped cream. The strawberries gave it a touch of sweetness and played off well with the tart of the lime. I think this one is going to be a keeper.

Thanks to everyone who took the time to answer my question. Here's hoping everyone gets to the island or islands of their choice this year.

Gotta have fresh key limes, or it's not worth it. A family favorite for years.



PIER HOUSE KEY LIME PIE
• 4 eggs, separated
• 1 (14-ounce) can sweetened condensed milk
• ½ cup Key lime juice
• ½ teaspoon cream of tartar
• 1 9-inch graham cracker crust, frozen
• 4 tablespoons sugar

Pie: Heat oven to 325 degrees. Beat the egg yolks on high speed until thick and light in color. Turn off the mixer and add the sweetened condensed milk. Mix on low speed. While mixer is still on low, add half the lime juice, then the cream of tartar, then the remaining lime juice. Mix until blended.
Pour filling into frozen crust. Bake 10 to 15 minutes, until filling is set and center is firm and dry to the touch. Cool pie to room temperature. Place in freezer for at least 3 hours before topping with meringue.
Meringue: Heat oven to 500 degrees. Heat egg whites in a double boiler with the 4 tablespoons of sugar, stirring often, until they reach 110 degrees (a bit more than lukewarm to the touch, if you don't have a thermometer).
Remove from heat and beat on high speed until fairly stiff peaks form. Spread on frozen pie, forming peaks with your spoon. Place in oven about 5 minutes, watching carefully, until meringue peaks are golden. Return pie to freezer.
. Makes 8 servings.
