where did they get the lamb chops? somewhere in south america or maybe new zealand?

Don't know on that. Also don't know where they get the chops currently at Grand Lido Negril, but d*mn they are good!!!!

Here is the recipe:

New Zealand Lamb racks
vegetable oil
garlic, chopped
Thyme
salt and pepper

We use New Zealand Lamb racks and cut them into chops, but if you prefer use U.S.(they are bigger and more meaty, they also have a different taste) Put them into a food storage pan, cover them with oil, add chopped Garlic, chopped Thyme and let them marinate overnight. Take them out of the Oil and slop them on the Barbie. Season with Salt and Pepper while cooking on both sides and off you go. You can buy Mint Jelly in any grocery Store or Supermarket.
