Here's a recipe that I threw together the other day. It got rave reviews.

Tropical Carrots
1 bag of fresh mini-carrots
1 T Fresh Grated Ginger
1 T Brown Sugar
Zest and Juice of one Lime
¼ Cup Flaked, sweetened Coconut

Boil the Carrots in salted water till just tender. Drain. Stir in remaining ingredients. Pour into serving Dish and top with the coconut. You can brown the Coconut under a broiler if desired. The Coconut can also be stirred in with the rest.
