OK, I accidentally opened a can of kidney beans when making my black bean salad for lunch, so I have an opened can of beans I need to use tonite. I found a couple of pieces of andouille sausage in the freezer, so that's thawing. Any ideas of what to fix? Red beans and rice? Something else?

Georgia....not to worry, bake them. Saute some onions, add the sausage to slightly brown. Add to a greased cassarole and add some maple syrup, some ketchup, a little mustard (yuck), a little garlic powder. Add the sausage/onion mixture and bake 'til bubbly....approx. 1/2 hr. Yum! You can add rice on the side. Good Luck!

BTW....forgot to mention....you can add some bacon, sauteed grn.beef/chicken to the recipe. Also, if you'd like add a hit of barbeque sauce. And if you don't want it hot, make a nice bean salad w/mayo/relish/minced onion & garlic. Always a nice addition. Hope it works out...

If it was not for dinner, make a red bean salad.
1 (15 ounce) can kidney beans 1 red bell pepper, chopped 2 green onions 1 cup crumbled feta cheese 1/3 cup chopped fresh parsley 1 clove garlic, minced 2 tablespoons lemon juice 1 tablespoon olive oil DIRECTIONS Rinse kidney beans under cold water. Drain well. In a large salad bowl, combine beans, red pepper, onions, feta, parsley, garlic, lemon juice, and olive oil. Cover and refrigerate for up to 3

Thanks for the ideas. We ended up going for a drive to look at houses, so ate out. I think I'll end up making some version of red beans and rice, since I've already thawed the andouille and have some leftover cooked rice.
