I wouldn't worry too much about bridge openings at this time. There are very few boats here just now.
Chesterfields and Skipjacks are NOT open. Great place for a beach day is Mary's Boon. New folks have the restaurant and bar and it's lovely there. Simpson Bay Beach is long and beautiful.
If you don't want to break the bank for great Italian, try Spaghetti House in Cupecoy. Favorites in Simpson Bay are The Palms, Thai Savanh, Sublime, Vesna Taverna
