Oil down is the national dish of Grenada. It's a combination of starchy veggies, pig parts, greens, dumplings and often chicken and or manicou,(which is possum). It's layered in a large cast iron pot and cooked down. It's made probably a little different by different cooks but that's it in a nutshell.
