I'm sure you know that Caribbean lobster is not really lobster but crayfish aka langouste. It's sometimes called spiny lobster but because they don't have claws, calling them lobster is misleading.
Personally, I prefer langouste over Maine lobster because I don't really care for claw meat and the tail is my preferred piece. I like my langouste either thermidor or poached in a courbouillon and then served cold with mayonnaise and salad. Grilled lobster is ok but more often than none, restaurants overcook them and they're too dry for my taste.
At Claude Mini-Club, 80% of the patrons jump on the grilled ones and I always have lots of poached ones to chose from.
To each his own.
