How is the fishing in st. Martin? We will be there the first week of October. What would be in season? Also is there a certain guide company you would recommend?
I have only fished in May so can't answer about October. Went out with Taylor Made and would recommend them to anyone. He knows how to find fish and is one of the only charters I know of on St Maarten that will let you keep the catch if you want to. He'll even clean/filet the fish for you too.
I really don't know what I would do with a bunch of fish but keeping a few might work. I never understood the concept of not being able to keep the fish you caught...and this catch is in January on one of Lee's charters (can't keep 'em)...Wahoo
P.S. That is one load of fish, looks like a waste. I don't think every restaurant could consume that much Wahoo. If they are freezing, then that's a shame. What a waste of fresh fish.
May should be OK, if it's not too hot. Captain Roy has repeatably done a great job for me for 20 years. He'll prepare the fish and let you keep all you want. He'll also pick you up where you are staying. 721-554-7995.
There are definitely sushi restaurants that buy "flash frozen" tuna. Many restaurants, not top shelf, are now ordering oysters, shucked, cryovaced and frozen. Our purveyor gave us some samples, tough to tell they weren't fresh.
