I have an old family recipe, but no amounts, just taste your way!
I used boneless chicken breasts or boneless chicken thighs or a mixture of both so that the cooking time is less, and the eating is easier!
Fry up chicken pieces in olive oil. Remove
Add more olive oil, some chopped onion, peppers, mushrooms. Add garlic after onions & mushrooms are cooked
Add back the chicken
Add some herbs (italian blend of some sort)
Add a can of plain tomato sauce (or home made sauce)
Add some good red wine
Let it simmer for about 20 minutes, stirring occasionally.
Serve over cooked egg noodles.
