[color:"blue"]Foolproof Crispy Baked Chicken[/color]


This one is simple to make and it is all about the cooking method...
the ingredients are limited only by your imagination. Extremely Crispy skin, never fail recipe, easy cleanup.
Add rubs and/or flavorings to your liking... (garlic powder is my favorite)...
works as well for 2 pieces or 12 pieces of chicken...

Ingredients

1 chicken cut up (skin on) (drumsticks,thighs,breasts,wings)
2 cups boiling water
Salt & pepper
Dry rub

Directions

1. Pre-heat BROILER on high
2. heat 2 cups water to boil
3. salt & pepper chicken (and add any rubs, optional)
4. Place chicken, skin side down, on a rack in a lasagna pan sprayed with PAM...
5. Place in pre-heated BROILER for 15 minutes
6. Remove from oven, turn oven to BAKE at 450-500 degrees
7. turn chicken over on the rack so skin side is up and fill bottom of pan with 1/2 inch boiling water up to just under the rack.
8. Bake at 450-500 degrees for 25-30 minutes. (temps are NOT a typo)

NOTE: I also like to marinade the chicken for 24 hours in buttermilk with some cayenne mixed in before cooking...

I have gotten lots of PM's in the past for a few of mine that rolled off TravelTalk...
