Drunken Beans with a Little Kick
Ingredients: 1 12oz bottle of Beer (I happened to use a Hefeweizen that we had on hand) 5 cups water (to cover the beans) 1 pound Pinto Beans (Cleaned, Soaked overnight & Rinsed) 1/2 cup chopped Onion 6 Bacon slices (Thick cut, Cut into 1/2 in. pieces... more will add even more flavor!) 4 Garlic Cloves (Finely chopped) 1 can Green Chiles Salt & Pepper to taste
Garnish: 1/4 cup grated Cheddar Cheese 1/4 cup chopped fresh Cilantro
Directions:
Soak beans according to instructions on bag. Fry sliced bacon with onion & garlic until bacon is just starting to brown.
Combine all ingredients in Crock Pot. Cook on High for 1 hour. Turn to Low and let simmer all day... until beans are tender & liquid is reduced enough to cover the beans by an inch. You can add more water (or Beer) if necessary.
Season to taste with Salt & Pepper. Optional: Right before you serve... sprinkle with grated Cheese and Cilantro.
