I just finished making this. I've made it several times before and since I can't eat the whole head of cauliflower at one or even two meals this is a great way to use the rest of it.
Pickled Cauliflower
Boiling water 1 T Fresh Lemon Juice 3 c Fresh cauliflower 1 c Fresh onion rings 1/2 Green pepper cut in strips 1/4 Red pepper cut in strips 1 c White vinegar 1 1/4 c Water 1/2 c Sugar 1/2 t Salt 8 Whole black peppercorns 1/2 t Mustard seed 1/2 t Celery seed 1/2 t Tarragon leaves
Pour boiling water and lemon juice over vegetables. Cover and let stand. Combine rest of ingredients. Bring to boil and boil 5 minutes. Drain water from vegetables and add hot vinegar mixture. Cool, cover, refrigerate over night.
I do use fresh tarragon from my garden so I triple the amount. Enjoy.

annie, when I worked nights bartending at the local ELKS Club in Gladstone, NJ... (about 25 years ago)... we'd always make pickeled eggs with beets, onions and cauliflower tops... and let them sit for a month or so... Yummm!... a red egg, a couple of slices of red onions and beets and really RED cauliflower!!! with S&P! and accompanied with an ice cold beer! nothin better during a football game!
