OK, that makes sense in CA. Not sure there's enough business on Virgin Gorda for them to have to work all night, but guess it would definitely be cooler baking at night. Some years back, M&M were the ONLY bakers for many of he Virgin Gorda restaurants and resorts, and for the markets at Leverick, Bitter End, Saba, and Spanish Town, in addition to their own walk-up neighborhood trade. By all means, there was ample ( and more) work for them to be there all night.
