St. John, you can rent them from Cinnamon Bay.

The Westin also has them on St. John.
The Ritz Carlton has them for rent on St. Thomas.

sorry i didn't specify. we're staying on st. thomas and only make day trips to st. john. we've been to the ritz carlton and they have some water sports rentals but i don't remember if they have hobie cats.
summer is my fillosophy ;-)
