Alright, it isn't even Thanksgiving and we've got a posting for leftovers! But, they're inevitable so let's prepare for extras! Here's one from Diabetic Living Mag that's wonderful and low carb. Enjoy!!
Turkey and Sweet Potato Chowder (Mashing the potato thickens the soup without adding carbs.)
Servings: 5 (1-1/3 cup) servings Calories216
1 14-ounce can reduced-sodium chicken broth 1 cup loose-pack frozen whole kernel corn 12 oz. cooked turkey breast, cut into 1/2-inch cubes (about 2-1/4 cups) 1-1/2 cups fat-free milk 1 large sweet potato, peeled and cut into 3/4-inch cubes (about 1-1/2 cups) 1/8 teaspoon ground black pepper salt to taste 1. In a 3-quart saucepan, combine chopped potato and broth. Bring to boiling; reduce heat. Simmer, uncovered, about 12 minutes or until potato is tender, stirring occasionally. Remove from heat. Do not drain. Using a potato masher, mash potato until mixture is thickened and nearly smooth.
2. Stir corn, turkey, milk, sweet potato, and pepper into potato mixture in saucepan. Bring to boiling; reduce heat. Cover and cook for 12 to 15 minutes or until the sweet potato is tender.
4. To serve, ladle chowder into bowls. Sprinkle with chopped parsley, if desired. Makes 5 (1-1/3-cup) servings.
** In order to use up leftovers, omit the fresh sweet potatoes and add pre-cooked one. Also, squash could be added as well. Just use your imagination and create your own special chowder! **

Hey, comeon...you know you'll have leftovers, think proactively. Do you really want Turkey Tetrazzini once again? Here's something else to consider.....
Savory Hand Pies
Made with leftover turkey, mashed potatoes, green beans, gravy. Add leftover chopped herbs for extra flavor. Feel free to add anything else you have leftover! Experiment!
Ingredients: 1 cup finely chopped roasted turkey 3/4 cup mashed potatoes 1/2 (8-oz.) package cream cheese, softened 1/2 cup cut green beans, cooked some leftover carrot,opt. 2 tablespoons chopped fresh parsley Salt and pepper 1 1/2 (14.1-oz.) packages refrigerated piecrusts 1 large egg, beaten Turkey gravy, warmed
Preparation: 1. Stir together first 6 ingredients. Season with desired amount of salt and pepper.
2. Preheat oven to 400°. Unroll each piecrust. Lightly roll each into a 12-inch circle. Cut each piecrust into 6 circles using a 4-inch round cutter. Place about 3 Tbsp. turkey mixture just below center of each dough circle. Fold dough over filling, pressing and folding edges to seal.
3. Arrange pies on a lightly greased baking sheet. Brush with egg.
4. Bake at 400° for 18 to 20 minutes or until golden brown. Serve with warm gravy.
Now, the purpose here is to use up leftovers so add whatever else you'd like. All will make them unique!
Note: Unbaked pies can be frozen up to 1 month. Bake frozen pies 30 to 32 minutes or until golden brown.

Yummmmm! They come out really good using Puff Pastry instead of the pie crust too!

and since puff pastry comes in squares, you can make squares and fold into triangles for your recipe, with no leftover waste!
