Karakter comes to mind, for sure, as Beerman said. Really nice food, lovely beach. I can't remember which nights it is now, but they have music also, a few nights a week, where you can make an evening of it, have lovely food and drinks and music. A whole different vibe, but still not bad at all, is Sunset Bar and Grill or Driftwood, by the airport, so not technically Simpson Bay I guess, but close. Beautiful view of the setting sun, a pretty full menu at Sunset, more limited menu at Driftwood, but neither has the quality of food that Karakter has. Driftwood you can really hear and see and smell the ocean, more than Sunset, but either is a good choice. Also Buccanneer is a choice, although I haven't been that happy with service there in recent times. Again, a sandwich and pizza type menu, not tapas, but generally good food.

Driftwood is not open terribly late. We have often gone past there at 9 PM and it has been closed. They are definitely open through sunset though. I think it kind of depends on how busy they are. Karakter may be open fairly late, although I personally have always left there by 9 or so. I really don't know what time they close, although it may be on their website.

Oops - forgot to add that Friday night is Tapas night with all kinds of tasty Tapas to munch on. I think the food is great there but that is my personal opinion. We'll be there in 17 nights - but whose is counting:)
