Here is a recipe for potato salad that is great for the summer. It has no mayonnaise or egg so it keeps well at room temperature and actually tastes better that way.

[color:"blue"]French-Style Potato Salad[/color]

12 – 14 (apx. 1.5 lbs) small new potatoes, unpeeled
3 T dry white wine
¼ C Olive oil
2 T wine vinegar
2 T Dijon mustard
¼ tsp salt
½ tsp to 1 tsp dried tarragon
¼ tsp pepper
¼ c sliced green onions
¼ c minced fresh parsley

Slice potatoes in ¼ inch slices and boil in salted water until just barely tender. Drain and add wine, tossing to coat. Let stand for 10 min. Combine olive oil and next 5 ingredients. Pour over potatoes, add onions and parsley and toss gently. May be served chilled or a room temperature.

Sounds exactly like the potato salad portion of a Salade Nicoise!

Sounds delicious! On my one and only trip to France, potato salad was made with oil, dijon, etc. Soooo good <img src="http://www.traveltalkonline.com/forums/images/graemlins/chef.gif" alt="" />

Great idea for potato salad on a hot summer day!
although, I still prefer my tater salad with onions, mayo, Coleman's mustard powder, chopped hardboiled eggs, parsley, paprika & slivered carrots...
BUT ya gotta keep it in the cooler! gotta be served & kept COLD!

My grandmother always made potato salad in this manner. Mayo? Never! Maybe it's a Mediterrean thingy! Whatever it is, it's the best!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />

My mother in law always said you only stir the potato salad in one direction, can't remember the exact saying but if you don't bad things will happen.
