Here is a recipe for potato salad that is great for the summer. It has no mayonnaise or egg so it keeps well at room temperature and actually tastes better that way.
  [color:"blue"]French-Style Potato Salad[/color]
  12 – 14 (apx. 1.5 lbs) small new potatoes, unpeeled 3 T dry white wine ¼ C Olive oil 2 T wine vinegar 2 T Dijon mustard ¼ tsp salt ½ tsp to 1 tsp dried tarragon ¼ tsp pepper ¼ c sliced green onions ¼ c minced fresh parsley
  Slice potatoes in ¼ inch slices and boil in salted water until just barely tender. Drain and add wine, tossing to coat. Let stand for 10 min. Combine olive oil and next 5 ingredients. Pour over potatoes, add onions and parsley and toss gently. May be served chilled or a room  temperature.

Sounds delicious!  On my one and only trip to France, potato salad was made with oil, dijon, etc.  Soooo good <img src="http://www.traveltalkonline.com/forums/images/graemlins/chef.gif" alt="" />

Great idea for potato salad on a hot summer day! although, I still prefer my tater salad with onions, mayo, Coleman's mustard powder, chopped hardboiled eggs, parsley, paprika & slivered carrots... BUT ya gotta keep it in the cooler! gotta be served & kept COLD!

My grandmother always made potato salad in this manner.  Mayo?  Never!  Maybe it's a Mediterrean thingy! Whatever it is, it's the best!!  <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />  Thanks for sharing.

My mother in law always said you only stir the potato salad in one direction, can't remember the exact saying but if you don't bad things will happen.
