Georgia, there are a couple of omissions in the recipe.
#1 what size can of tomatoes?
#2 never said when to put the lentils in.
I had a small can (14oz) of tomatoes and used that. Put the lentils in when the broth and tomatoes were put in. It is simmering now. I believe it is going to need either more tomatoes or more stock as there is hardly any liquid in it all. I used a tsp. of Frank's Red Hot Sauce.
I just tasted it, lentils and celery not quite cooked but it seems kind of bland. I'll see what happens after the lime juice and cilantro.
