You've probably already considered this, but we were once told by a restaurant owner in a fairly popular place on the island that he prefers not to serve his tap water because, while it is totally potable and he has paperwork to attest to that fact, it neither smells nor tastes terrific. If someone insists, he will serve it if pressed to but he will also recommend sparkling or flat water instead without going into great detail with most people.
