Squash Casserole
2lbs yellow squash 1 can cream of celery soup 1 stick butter 1 medium onion, grated coarsely 1 large carrot shredded (optional) salt and pepper to taste 1/2 cup grated sharp cheese 1 8oz carton sour cream 1 beaten egg 1 cup herb seasoned stuffing crumbs
Mash cooked and drained squash.Add remaining ingredients. Put into greased casserole. Top with another 1/2 cup crumbs mixed with 2 Tbsps. butter. Sprinkle with paprika. Bake 350 ,30 minutes
High calorie for a veggie. But it's good and it's Christmas! Love Edisto! Our family has summered there for 50 plus years!
