Quick & Easy... really tasty!

[color:"blue"]HARVARD BEETS[/color]

3 tbsp cornstarch
1/3 cup sugar
¾ tsp salt
1 ½ cup beet liquid
2 tbsp white vinegar
1 ½ tbsp butter (melted)
3 cups beets, cooked or canned, sliced and heated

1) Mix cornstarch, sugar & salt
2) Blend in the beet liquid, vinegar and butter
3) Cook over moderate heat, stirring constantly, until thickened
4) Add heated beets and let stand 10 minutes
5) Serve immedieatly

For a different type of beet recipe, add to your beets:

- 2 tsp. of cinnamon
- 15 to 20 whole cloves
- balsamic vinegar
- brown sugar
I will admit that I use canned or jar beets.
