Me three!! I make a fresh beet salad with goat cheese, glazed walnuts and dried cranberries over greens. A simple vinagrette tops it off! Yumma!!

BTW....Trader Joes has fresh, cooked & peeled beets in the refrigerator case and they're awesome! I use them all the time. Tastes homemade.

For a different type of beet recipe, add to your beets:

- 2 tsp. of cinnamon
- 15 to 20 whole cloves
- balsamic vinegar
- brown sugar
I will admit that I use canned or jar beets.
