Here's anoter.
Vietnamese Cole Slaw
11 oz. Chinese cabbage, finely shredded 3 stalks celery, finely sliced 1 med. carrot, cut into fine matchsticks 1 1/2 tbs oil 2 tbs shredded Vietnamese mint 1 tbs chopped garlic chives 1 tbs crisp fried onion
Dressing: 4 tbs rice vinegar 2 tbs castor sugar 1 tbs fish sauce 1 tbs lime juice 1/2 tsp salt 1/2 tsp freshly ground black pepper 1 med onion, finely sliced
Place the dressing ingredients in a small bowl and toss well to combine. Let stand at least 20 minutes so the onion absorbs the flavours.
Place the cabbage, celery, carrot, oil in a large bowl. Pour dressing over and toss well. Place on serving dishes and scatter over the mint, chives and crisp fried onion. Enjoy!

Annie, I learned from the ladies at Uncle Ernie's to use honey instead of sugar. That's how they make their stupendous cole slaw. Tried it and it worked. Cheers irina Be well!

Annie, I made your slaw recipe a couple weeks ago and we really enjoyed it. I made it again this weekend and turned it in to a main dish by adding shredded poached chicken, fresh bean sprouts and peanuts. I served lime wedges and Sriracha sauce on the side. Just thought I would share my variation. Deb
