*** WARNING....this Graham Cracker Candy is addictive!! ***

Prep Time: 15 minutes
Cook Time: 10 minutes
Total Time: 25 minutes

Ingredients:

•1 package (1/3 box) graham crackers (approximately 12 double graham crackers)
•1 cup butter
•1/2 cup packed brown sugar
•2-1/2 ounces (3/4 cup) sliced almonds or other nuts

Preparation:
Line cookie sheet with foil. Place single layer of graham crackers on foil. Boil butter and sugar together for 2 minutes, stirring constantly. Pour over graham crackers. Sprinkle with almonds. Bake at 350 degrees for 10 minutes. Lift foil from pan, cool, and break into pieces. Enjoy! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />

BTW....if you're ambitious you could drizzle some melted chocolate over all...then cool.

I forgot about this recipe. Thanks for the reminder. My grandmother always made these at Christmas. Some people say you can sub saltines for the graham crackers. Never tried that.

I make a version with saltines:

Cracker Candy

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 sleeve saltine crackers, or more to cover pan
2 sticks unsalted butter
1 cup sugar
12 ounces chocolate chips
3/4 cup pecans -- chopped
1 pinch salt

Arrange saltines on a cookie sheet lined with foil, covering entire sheet. Melt sugar with butter; bring to a boil over medium heat, stirring constantly. Continue to boil for three minutes, stirring constantly. Pour over crackers and spread with an offset spatula to cover all. Bake at 350 for 12-15 minutes, until golden brown. Let stand for 2 minutes. Cover with chocolate chips; spreading melting chocolate to cover. Top with chopped nuts, pressing nuts into chocolate. Chill until firm, then break apart.
