I just received this recipe from a recipe club I belong to(myrecipes.com) and I just knew it would put a smile on many faces it sure did mine and I don't even eat chocolate!! <img src="http://www.traveltalkonline.com/forums/images/graemlins/Grin.gif" alt="" /> Enjoy!

Mississippi Mud Cake

The women of Huffman United Methodist Church in Birmingham used this recipe for the church's 125th anniversary celebration. Of the 100 cakes made, there wasn't any left over.

Ingredients
1 cup butter, melted
2 cups sugar
1/2 cup unsweetened cocoa
4 large eggs, lightly beaten
1 teaspoon vanilla extract
1/8 teaspoon salt
1 1/2 cups all-purpose flour
1 1/2 cups coarsely chopped pecans, toasted
1 (10.5-ounce) bag miniature marshmallows

Chocolate Frosting
Preparation
Whisk together melted butter and next 5 ingredients in a large bowl. Stir in flour and chopped pecans. Pour batter into a greased and floured 15- x 10-inch jellyroll pan.

Bake at 350° for 20 to 25 minutes or until a wooden pick inserted in center comes out clean. Remove from oven; top warm cake evenly with marshmallows. Return to oven, and bake 5 minutes. Drizzle Chocolate Frosting over warm cake. Cool completely.

Note: 2 (19.5-ounce) packages brownie mix, prepared according to package directions, may be substituted for first 7 ingredients. Stir in chopped pecans. Bake at 350° for 30 minutes. Proceed with marshmallows and frosting as directed.

Mmmmm... I'd make a chocolate cream-cheese frosting for this one!

INGREDIENTS
1 (8 ounce) package cream cheese (room temp.)
1/4 cup confectioners' sugar
1/4 cup heavy whipping cream
1 cup semisweet chocolate chips
1/3 tsp salt


DIRECTIONS
In double boiler melt chips and add heavy cream, mix until smooth take off of heat.
In mixing bowl cream together sugar and cream cheese & salt until smooth, slowly add chocolate mixture.
Mixture will thicken up as the chocolate cools.

No, I missed something. Sorry. Here's the recipe:

Mississippi Mud Cake Chocolate Frosting.......

Ingredients:

1/2 cup butter
1/3 cup unsweetened cocoa
1/3 cup milk
1 (16-oz.) package powdered (confectioners) sugar
1 teaspoon vanilla extract

Preparation

1. Stir together first 3 ingredients in a medium saucepan over medium heat until butter is melted. Cook, stirring constantly, 2 minutes or until slightly thickened; remove from heat. Beat in powdered sugar and 1 tsp. vanilla at medium-high speed with an electric mixer until smooth.

This Chocolate Frosting can be used on other cakes, too. <img src="http://www.traveltalkonline.com/forums/images/graemlins/Clapping.gif" alt="" />

How thick does this cake come out, since it is done in a jelly roll pan? More like bars?

Not a thin jelly roll pan but a thick cookie sheet would cut it. Or if you prefer thicker use a lasagna pan. It's up to you.
