Hey, it's MANGO season! Just copied Carol's mango salsa recipe and thought I would share this cobbler I found on-line (freshmangoes.com) quite a few years ago. It's great when mangos are plentiful.

MANGO COBBLER

3-5 large mangos, peeled and sliced
3/4 cup sugar
1 tsp. cinnamon
pinch of salt

Place sliced mangos in 9 X 13 casserole dish. Sprinkle with sugar, cinnamon and salt.

TOPPING:
1 cup flour
3/4 cup sugar
1 rounded tsp baking powder
1 cup milk
6 Tbsp melted butter
1/2 tsp salt
1 tsp vanilla

Mix ingredients until smooth and pour over mangos.

Bake at 400 degrees for 10-15 min, reduce to 375 degrees for 45 minutes, until golden brown.

* I think it has way too much sugar over the mangos and usually make it with much less. I have also made it in a smaller dish when I didn't have enough mango. It is a pretty forgiving recipe. We serve it hot with vanilla Haagen-Daaz. YUM!
