Granted but what you are paying for is to have your food cooked properly. I don't necessarily disagree, but sometimes it's just not worth the wait. I have questioned a steak once that I ordered mid-rare, and it came out mid-well. The waiter acknowledged that he had picked up the wrong steak from the line, and brought me another. This was in a high-end restaurant in the US. At the Yacht Club, I would expect to have to wait quite a while, as bran suggested in the comment above mine; and it's just not worth it.
