contessa, we buy so many LARGE turnips every fall, cook, mash them, and then freeze them...
we have enough (almost) til next years harvest!

Lotta work! peeling and cutting them all up (Uggh! worst part! but you get big forarms!)...
cooking (in a turkey fryer pot), whipping them, and seasoning in the Kitchen-Aid... and then packaging for freezing...
But well worth the work!
I don't think freezing hurts them at all...
