I love to make grilled Eggplant...
Slice eggplant aqbout 1/2 inch thick, lengthwise...
Brush liberally with Garlic flavored olive oil...
Grill over meduim heat, or indirect heat, til done... YUMMMM!
Finished product, combined with marinara sauce and provalone & mozzarella on a sub roll makes a great eggplant sandwich!
